Stir Fry Pork With Capsicums


Ingredients:

250g lean pork (cut into strips. Marinated with 1 tbsp light soy sauce, 1 tbsp dark soy sauce and 1/2 tsp sesame oil)
1/2 orange capsicum (cut into strips)
1/2 yellow capsicum (cut into strips)
2 stalks spring onions (snapped into 5cm length)
3 thin slices ginger (cut into strips)
3 cloves garlic (minced)
1 tsp oyster sauce
Water (optional)
1 tbsp cooking oil

Methods:

1. Heat the oil in the pan. Saute the ginger and garlic.

2. Add the pork and stir fry until almost cooked.

3. Add the capsicums and continue to stir fry. Drizzle some water and add the oyster sauce.  Continue to cook until the sauce is almost dry up. Add the spring onions and stir quickly. Turn the heat off.

Serve with rice.

Stir Fry Minced Chicken With Potatoes And Capsicums


Ingredients:

200g minced chicken (marinate with 1 tbsp light soy sauce and 1 tbsp dark soy sauce)
1/2 yellow capsicum (cut into cubes)
1/2 orange capsicum (cut into cubes)
2 small potatoes (cubed)
1 onion (chopped)
2 cloves garlic (minced)
2 tbsp cooking oil
1 tbsp light soy sauce
2 tbsp dark soy sauce


Methods:


1. Heat a tbsp cooking oil in a non stick pan and cook the potatoes. Remove and set aside.

2. Heat the oil in the non stick pan. Sauté the onion and garlic.

3. Add the minced meat and cook for few minutes.

4. Add the capsicums and potatoes.

5. Drizzle the light and dark soy sauce. Cook until the sauce starts to dry up.

Serve with rice.



Stir Fry Greens With Shiitake Mushrooms


Ingredients: 

1 packet Baby Bak Choy (washed)
1 packet Shiitake mushrooms (washed and sliced)
2 cloves garlic (lightly crushed)
1 tbsp cooking wine
1 tbsp light soy sauce
1 tsp oyster sauce
1 tbsp cooking oil
Water (optional)

 

Methods:

1. Heat the oil in a non stick pan. Saute the garlic.

 
2. Toss in the mushrooms and stir fry quickly. Add some water and cook for 1 minute.

3. Add the vegetables and stir fry quickly. Drizzle the soy sauce, oyster sauce and cooking wine. Add some Water if it's getting too dry. Turn the heat off. Serve with rice.

Stir Fry Szechuan Vegetables With Pork


Ingredients: 

1 round Szechuan vegetables (washed and soaked for 30 mins. Slice thinly) 
100g pork belly (sliced thinly)
4 cloves garlic (minced finely)
2 chilli padi (deseeded and chopped finely)
2 tbsp thick dark soy sauce
1 tbsp cooking oil 
Sugar
Water (optional)

Methods:

1. Heat the cooking oil in the non stick pan. Saute the garlic and chilli padi.

2. Add the pork belly and stir fry until the meat is slightly brown.

3. Add the szechuan vegetables and stir fry. Drizzle the thick dark soy sauce and continue to stir well. Sprinkle some sugar and stir fry for another minute. Turn the heat off.

Best serve with porridge.

Stir Fry Beansprouts With Beancurd







Ingredients:
50 cents of beansprouts (trim both ends)
1 Firm beancurd (cut into bite sizes)
2 chilli padi (deseeded and chopped)
2 stalks of spring onions (cut into 5cm length)
2 cloves garlic (minced)
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp cooking wine
1 tbsp cooking oil


Methods:

1. Heat some oil in the non stick pan. Once the oil is hot, deep fry the beancurd until golden.
2. Heat a tbsp of cooking oil in the non stick pan. Saute the chilli padi and garlic.
3. Toss the beanspouts and stir fry quickly. Add the beancurd and mix well.
4. Drizzle the soy sauce. Add the oyster sauce and cooking wine. Stir well.
5. Add the spring onions and stir. Turn the heat off.

Stir Fry Assorted Mushrooms

Ingredients:

8 fresh Shiitake mushrooms (sliced)
1 packet fresh Yanagi Matsutake mushrooms (ends trimmed)
1 packet Shimeiji mushrooms (ends trimmed)
1 packet Enoki mushrooms (ends trimmed)
2 pieces ginger
3 cloves garlic (minced finely)
2 stalks spring onions (snapped into 5-6cm length)
1 tbsp cooking oil
1 tbsp light soy sauce
1 tbsp cooking wine
1 tbsp oyster sauce
A dash of coarse black pepper

Methods:

1. Heat the oil in the cooking pan.

2. Saute the ginger and garlic. Add all the mushrooms into the pan.  Stir fry.

3. Drizzle the light soy sauce and cooking wine. Stir fry for a minute. Add the oyster sauce.

4. Continue to cook for a minute. Add the spring onions and stir well. The sauce should thicken by now. Turn the heat off.

Stir Fry Dou Miao With Prawns & Mushrooms



Ingredients:
1 box of Dou Miao
2 cloves garlic (lightly crushed)
2 chilli padi (deseeded and chopped)
8 fresh shiitake mushrooms (halved)
16 small prawns (deshelled and deveined)
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp cooking oil
Water (optional)
Methods:
1. Heat the oil in the wok.
2. Saute the prawns till cooked. Set aside.
3. Saute the garlic and chilli padi till fragrant.
4. Toss in the mushrooms and Saute. Add some water if too dry.
5. Add the Dou Miao and drizzle the soy sauce.
6. Continue to stir fry. Add the oyster sauce and mix well.  Lastly toss in the prawns. Give it a quick stir and turn the heat off.

Stir Fry Kiam Chye With Roasted Pork




Ingredients:

400g Kiam chye (soaked with water for 30 - 60 minutes. Drain and set aside)
200g roasted pork
1 tomato (quartered)
2 cloves garlic (slightly crushed)
1 tsp sugar
1 tbsp cooking oil


Methods:

1. Heat cooking oil in the wok.
2. Saute the garlic.
3. Toss in the roasted pork and stir fry.
4. Add the kiam chye and stir fry for a minute.
5. Add the tomato and continue to stir fry. Cover and simmer for a minute.
6. Remove the cover and add the sugar. Stir well. Turn the heat off.

Stir Fry Napa Cabbage And Mushroom With Dried Shrimp



Ingredients:

1/2 Napa Cabbage (cut into bite sizes)
8 dried mushrooms (soaked till soften and cut halved)
2 tbsp dried shrimps (washed and soaked for 10 minutes, drained)
6 slices young ginger
Sea salt
1 tbsp cooking oil
Water (optional)

Methods:

1. Heat the oil in the wok. Sauté the dried shrimps and ginger till fragrant.

2. Toss in the stems of Napa Cabbages and mushrooms. Stir fry for a minute.

3. Add the rest of the Napa cabbages and continue to stir fry. Add some water if it's getting too dry.

4. Stir fry till the vegetables are soften and add some sea salt as desired.


French Beans With Beancurd And Fish Cake



Ingredients:

1 packet French Beans (ends trimmed and snapped into 5cm length)
1 firm beancurd (cut into bite sizes)
1 fish cake
2 cloves garlic (minced finely)
2 tbsp dried shrimps (washed, soaked for 10 minutes. Drain)
Oil for deep frying
1 tbsp cooking oil
Water
Sea salt

Methods:

1. Deep fry the beancurd and fish cake till golden and crisp.

2. Deep fry the French Beans till they are slightly wrinkled.

3. Heat 1 tbsp oil in the wok. Sauté the garlic and dried shrimps.

4. Toss in the vegetables, beancurd and fish cake. Sprinkle some water and stir fry.

5. Add some sea salt and mix well.

Stir Fry Spicy Cabbage With Dried Shrimps


Ingredients:

1 cabbage (cut into bite sizes)
1 carrot (sliced)
1 handful of dried shrimps (washed)
2 cloves garlic (lightly crushed)
2 chilli padi (deseeded and chopped)
Sea salt
1 tbsp cooking oil

Methods:

1. Heat the oil in the wok.

2. Sauté the dried shrimps, chilli padi and garlic until fragrant.

3. Add the carrots and cabbage. Stir fry for about 3 minutes. Add the sea salt as desired.


Stir Fry Dou Miao



Ingredients:

1 pack of Dou Miao
2 cloves garlic (lightly crushed)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cooking oil

Methods:

1. Heat the oil in the wok.

2. Saute the garlic.

3. Toss in the vegetables and stir fry.

4. Drizzle the soy sauce and stir fry.

5. Add the oyster sauce and continue to stir fry for another 10 seconds.

Stir Fried Cabbage With Pork



Ingredients:

1/2 of cabbage (cut into bite sizes)
150g pork tenderloin (slices thinly)
1 bundle Tang Hoon (soak till soften)
2 garlic (minced finely)
4 pcs ginger
1 tbsp light soy sauce
1/3 tsp sesame oil
1 tbsp oyster sauce

50g water
1 tbsp cooking oil

Methods:

1. Marinate the pork with light soy sauce and sesame oil for 30 minutes.

2. Heat a tbsp of cooking oil in the wok. Saute the pork.

3. Push the pork to the side of the wok. Sauté the ginger and garlic. Add a little oil if there's not much oil left.

4. Toss in the cabbage and stir fry for a minute.

5. Add the Tang Hoon and mix well.

6. Add the oyster sauce and water. Continue to cook till the sauce almost dry up. Add a little sea salt if too bland.

French Beans With Minced Pork



Ingredients:

1 packet of thin French Beans (ends trimmed)
150g minced pork (marinate with 1 tbsp soy sauce and 1/2 oyster sauce)
1 tsp dark soy sauce
1 clove garlic (minced finely)
1 tsp cooking oil
Cooking oil for frying
Sea salt

Methods:

1. Heat some oil in the wok to fry the French beans till they are slightly wrinkled. Remove and set aside. Remove the oil.

2. Heat 1 tbsp oil in the wok and sauté the garlic.

3. Add the minced pork and sauté for a minute.

4. Drizzle the dark soy sauce and continue to cook till the sauce dries up.

5. Add the French beans and stir well with minced pork... Sprinkle the sea salt and stir well.

Stir Fry Lady Fingers




Another Stir Fry Vegetables that goes well with porridge and rice...

Ingredients:

1 packet of Lady Fingers
1/2 carrot (sliced thinly)
2 cloves garlic (lightly crushed)
2 chilli padi (deseeded and chopped)
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp cooking oil
Water

Methods:

1. Wash the lady fingers and slice.

2. Heat the cooking oil in the wok. Sauté the garlic and chilli.

3. Toss in the carrots and lady fingers. Stir fry. If its too dry, add some water into the wok.

4. Drizzle the soy sauce and continue to stir fry. Add the oyster sauce and some water. Stir fry for another minute until the vegetables start to turn slightly limp. Turn off the heat.

Stir Fry Vegetables With Tang Hoon (Chap Chye)



Another vegetables dish! First try with tang hoon. Not bad but still got rooms for improvement! :p

Ingredients:

1/4 Chinese white cabbage (cut into smaller pieces) stems separate
8 snow peas (halved)
3 pieces black fungus (soaked, soften and sliced thinly)
3 dried mushrooms (soaked, soften and sliced thinly)
1 knot Tang Hoon (soaked and soften)
5 slices ginger (julienned)
1 clove garlic (minced)
200ml or more chicken stock
1 tbsp oyster sauce
1/2 tap cooking wine

Methods:

1. Heat the oil in a wok. Saute the ginger and garlic.

2. Toss in the stems of the cabbage and stir fry for a minute.

3. Add the dried mushrooms and black fungus and cook until the stems are soften and slight transparent.

4. Toss in the remaining cabbage leaves and snow peas. Stir fry for a minute.

5. Add the chicken stock, oyster sauce and cooking wine.

6. Lastly, add the tang hoon and mix well with the vegetables and sauce. Turn off the heat.


Stir Fry Kiam Chye With Pork



I cooked this dish to go with porridge few weeks ago... Geez! I was lazy that why took so long to post this...

Well, I must say this is a very nice and comfort dish to go with porridge. I think the whole plate of kiam chye went into my tummy! Hahaha

Ingredients:

200-300g Kiam Chye
150g pork belly (sliced thinly)
2 cloves garlic (lightly crushed)
1 tbsp cooking oil
1/2 tsp sugar

Methods:

1. Soak the kiam chye with water for 30 minutes. Change the water in between. Drain and raise.

2. Heat the oil in the wok.

3. Sauté the pork until cooked. Move the pork to the side of the wok.

4. Sauté the garlic till fragrance.

5. Toss in the kiam chye and mix well with the pork.

6. Sprinkle the sugar and continue to stir fry for 2 minutes.

Sprinkle some water if too dry when stir frying.

Easy Stir Fry Vegetables (Flowering Choy Sum)



This is the usual way we stir fry vegetables at home. With little ingredients, we can easily whip up a plate of vegetables.

My son only eats leafy vegetables cooked with oyster sauce. He said the vegetables taste much better with oyster sauce than just salt. More flavorful I guess... Sometimes I add chicken stock if I have some available.

Ingredients:

1 pack of flowering Choy Sum (cut into about 5cm length)
1 tbsp minced garlic
3 slices young ginger
1 tbsp oyster sauce
1 tbsp cooking oil

Methods:

1. Heat the oil in a wok. Toss in the ginger and garlic. Saute till fragrance.

2. Add the vegetables into the wok and stir fry quickly.

3. Add the oyster sauce and stir well. Turn off the heat. The vegetables should still look green and crunchy. Do not overcook the vegetables.

Always stir fry with high heat.

Thai Stir Fry Baby Kailan With Mushrooms



Ingredients:

1 pack of Baby Kailan
1 pack of shiitake mushrooms (about 10, cut into half)
1/2 carrots (sliced)
1 clove garlic (minced)
1 slice ginger (cut into matchsticks)
1 chilli padi (deseeded and chopped)
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp fish sauce
1 tbsp lime juice
1 tbsp cooking oil
Water

Methods:

1. Heat the oil in the wok. Sauté the ginger, chilli padi and garlic.

2. Toss in the carrots and mushrooms. Stir fry for a while. Sprinkle some water if the wok is getting too dry.

3. Add the vegetables and continue to stir fry for a minute.

4. Drizzle the lime juice, fish sauce, soy sauce and oyster sauce. Continue to stir fry for another one minute.

5. Serve with rice.

Stir Fried French Beans


Sorry if the picture is too dark. One of my kitchen lights suddenly became cranky when I was taking the pictures! French beans for dinner today...

Ingredients:

1 packet of French Beans (string pulled and snapped into half)
Shredded carrots
8 button mushrooms (sliced) I used canned mushroom
1 clove garlic (minced)
1 Chilli Padi (chopped)
Pinch of salt
3 tsp dried shrimp powder
50ml or more water / chicken stock
1 tbsp cooking oil

Methods:

1. Heat the oil in a wok. Sauté the garlic.

2. Toss in the French Beans and stir fry. Add a little chicken stock and let it cook for a minute.

3. Add the carrots, chilli and mushroom. Stir fry and add the rest of the chicken stock.

4. Sprinkle the dried shrimp powder and a little salt (dried shrimp powder is slightly saltish so no need to add too much salt). Stir and let it cook for about 2 minutes. Turn off the heat.
