French Beans Chai Po Omelette

             

Ingredients: 
1 packet French Beans (ends trimed and strings pulled. Cut slant)
2 tbsp Chai Po (less salty type)
3 cloves chilli padi (deseeded and chopped)
4 eggs (beaten and add a tbsp light soy sauce. Mix well)
1 tbsp light soy sauce
2 tbsp cooking oil
Methods: 
1. Heat 1 tbsp cooking oil in a pan. Saute the garlic and chilli.
2. Toss in the French beans and stir fry for a minute. Drizzle the light soy sauce. Drizzle some water too if it's getting too dry. Add the Chai Po and continue to stir fry until the French Beans turn bright green. Remove the vegtables and let it cool.
4. Mix the vegetables with the eggs. Heat a tbsp cooking oil on a non stick pan.
5. Pour the egg mixture onto the pan and let it cook. Stir after few seconds to make sure it wasn't burnt below.  Cook until the egg mixture is totally dry.

Prima Taste Laksa



Serve 6

Ingredients:

3 boxes Prima Taste Laksa
2 packet thick beehoon (blanched)
6 hard boiled eggs (halved)
20 cooked prawns (shells removed and deveined)
2 fish cakes (pan fried till golden)
12 cooked fishballs
6 tau pok (deep fried)
Laksa leaves (chopped finely)
2 litres water

Methods:

1. Boil 2 litres of water in the pot.

2. Divide the thick bee hoon into 6 bowls. Arrange the prawns, fishballs, hard boiled egg and few slices of fish cakes on the thick bee hoon.

3. Put in the laksa premix and laksa paste into the boiling water. Boil with high heat for 5 minutes. Add the tau pok into the pot and cook for a minute.

4. Ladle the laksa gravy into the bowls and sprinkle some chopped laksa leaves.

Long Beans And Chai Po Omelette



Ingredients:

4 eggs (beaten)
6 stalks long bean (chopped)
2 tbsp heap of chai po
1 tsp garlic powder
2 tbsp cooking oil

Methods:

1. Heat 1 tbsp oil in a wok. Saute the long beans for a minute before adding the chai po. Sauté for another minute.

2. Sprinkle the garlic powder and stir well. Turn off the heat.

3. Remove the long beans and chai po from the wok and mix them with the egg mixture.

4. Heat 1 tbsp oil in the same wok. Pan fry the omelette both side until evenly cooked.

Onion Omelette



What types of omelette you like best? Prawn omelette, Seafood omelette, Minced pork omelette, etc.. How about Onion Omelette for dinner? Drooling...

Ingredients:

5 eggs (beaten)
1 large brown onion (sliced)
3 chilli padi (deseeded and chopped)
3 tbsp cooking oil
2 tbsp soy sauce

Methods:

1. Heat 1 tbsp of cooking oil in the non stick pan.

2. Sauté the onions and chilli padi until the onions are soften (less than a minute). Remove and set aside.

3. Add the soy sauce into the eggs and mix well. Then add the onions and chilli padi into the egg mixture. Stir well.

4. Heat 1 tbsp cooking oil in the pan. Pour half of the onion egg mixture into the pan. Flip to another side after a while and make sure that the omelette is cooked. Once the omelette is cooked, remove and place it on a plate.

5. Add 1 tbsp cooking oil in the pan and continue to cook with the remaining egg mixture with Step 4.

Fried Rice



I don't really like fried rice... Fried rice tends to be oily and I hate peas! Hahaha... But I did taste some really good fried rice from Tze Zhar stalls and restaurants. The wok hei which we can't get from our kitchen stove.

Today I decided to cook fried rice as I have the ingredients on hand and I have ran out of idea what to cook...

Ingredients:

Cooked rice for 5 pax
3 tbsp diced carrots
3 tbsp kennel corns
4 dried mushrooms (soaked till soften and diced)
3 eggs beaten
5 cloves garlic (minced)
5 shallots (minced)
5 tbsp soy sauce
1/2 tsp salt
2 tbsp cooking oil

Methods:

1. Heat the oil in a wok. Sauté the garlic and shallots.

2. Add the carrots, corns and dried mushrooms. Stir fry.

3. Add the cooked rice into the wok. Stir and mix.

4. Pour in the eggs mixture and toss with the rice evenly.

5. Add the soy sauce and continue to stir and mix well.

6. Lastly, add 1/2 tsp of salt. Mix evenly.

Steamed Egg Custard




I have tried steaming eggs few times but always failed. The eggs usually turned out too watery! Even I followed the exactly recipes, the results was.... Sigh... I almost gave up until I saw a post from Kokken69! So today, I braved myself for another try! Hehehe... This time I made it! Yes!!! The custard was really smooth and soft. My sister and I couldn't stop eating it...

Recipe mainly adapted from Kokken69.

Ingredients:

3 eggs
400ml chicken stock
Pinch of salt

Methods:

1. Beat the eggs and add salt into the mixture.

2. Add the chicken stock and stir.

3. Using a filter, pour the mixture into a steam bowl.

4. Steam with boiling water for 20 minutes until it has set nicely.

I topped the egg custard with minced meat and spring onions.

Bitter Gourd With Eggs


My first time making bitter gourd omelet and it was successful! Well, I used the remaining half of bitter gourd for Braised chicken wings with bitter gourd the day before.

Ingredients:

1/2 bitter gourd (sliced thinly)
1 red chili (sliced thinly)
1/2 tsp garlic powder
1 tsp salt
1 pinch of salt
2 eggs (beaten)
1 tsp soya sauce
Dash of pepper
2 tbsp cooking oil

Methods:

1. Rub 1 tsp of salt on the bitter gourd to remove the bitterness for 1 minute. Rinse off the salt and set aside.

2. Add 1 tsp soya sauce into the egg mixture and beat well.

3. Heat the oil in the pan. Toss in the bitter gourd and stir fry.

4. Sprinkle the garlic powder.

5. Toss in the sliced chili and continue to stir fry. Sprinkle a pinch of salt.

6. When the bitter gourd turns slightly limp, pour in the egg mixture.

7. When the egg starts to set, toss evenly.
