Chicken Bolognese Spaghetti


Serve 6

Ingredients:

300g spaghetti
1 big tomato (diced)
1 onion (minced finely)
300g minced chicken
500g pasta sauce (store bought)
2 tbsp olive oil
Water for cooking spaghetti
200ml water
4 tbsp water for cooking the spaghetti
Sea salt
Coarse black pepper
Chopped Fresh Italian parsley (optional)


Methods:

1. Heat the oil in a non stick pot.

2. Sauté the onion for few minutes. Add the minced chicken.

3. Cook the minced chicken for few minutes. Toss in the diced tomatoes. Add the pasta sauce and 200ml of water. Cook for few minutes before turning the heat down and let it simmer for 30 minutes.

4. Boil a pot of water with a tsp of salt. Cook the spaghetti for 10-15 minutes. Drain and set aside. Remember to keep some pasta water.

5. Add 4 tbsp of pasta water into the pasta sauce. Stir well. Season with some sea salt. Stir well and turn the heat off.

6. Place some spaghetti on a plate and ladle some minced chicken pasta sauce on the top. Sprinkle some coarse black pepper.


Easy side dish: Sautéed assorted mushrooms with garlic and soy sauce

Ingredients:

10 Shiitake mushrooms (sliced)
2 packets enoki mushrooms (ends trimmed)
1 packet fresh Yanagi Matsutake mushrooms (ends trimmed)
2 cloves garlic (minced finely)
1 tbsp olive oil
2-3 tbsp soy sauce
Coarse black pepper


Methods:

1. Heat the oil in a non stick pan. Sauté the garlic.

2. Add the shiitake and Yanagi Matsutake mushrooms. Drizzle 1 tbsp of soy sauce. Stir fry quickly.

3. Add the enoki mushrooms and drizzle the remaining soy sauce. Stir fry. Cook till the sauce has dry up and sprinkle some coarse black pepper. Stir well.

Chicken Chop With Pasta



This is our dinner for tonight. I bought 6 chicken thighs from the wet market today. I asked the stall holder to debone the chicken.

The chicken thighs turned out to be juicy and tender. I made the same dinner for my brother (the one who had chickenpox) with minimum marinade. But he said it was delicious. Well I guess as long as he can eat chicken, it will taste awesome to him!

Ingredients:

Chicken chop:
1 chicken thigh (deboned)
1tbsp soy sauce
A little oyster sauce
A dash coarse black pepper
1 tsp cooking oil
100ml water

Vegetables (1 cup):
Broccoli
Baby carrots
Yellow bell pepper
Sea salt / garlic salt

Mashed potatoes:
1 potato (washed and peeled)
1 tsp butter
1 tbsp milk
Salt

Pasta:
Spaghetti for 1 pax (cooked)
2 tbsp minced onions
1 cup sliced shiitake mushrooms
1 tbsp butter

Methods:

1. Marinate the chicken with soy sauce, oyster sauce and black pepper for at least 30 minutes.

2. Cook the baby carrots with a pot water for 5 minutes. Add the broccoli and cook for another minute. Remove the vegetables and transfer them into a bowl of cold water. Drain and set aside.

3. Cook the potato with a small pot of water until soften. Mash the potato and stir in the butter, milk and salt. Set aside.

4. Heat the oil in a non stick pan. Pan fry the chicken thigh. Try to flatten the chicken as much as possible. Pan fry about 5 minutes each side. If too dry, add a tablespoon of water each time.

5. While pan frying the chicken, sauté the vegetable at the side of the pan. Sprinkle a little seasalt or garlic salt on the vegetable. Remove the vegetables and place on a plate with the mashed potatoes.

6. Once the chicken is cooked, remove and place on the same plate.

7. Prepare the gravy with the same non stick pan. Pour in 100 ml of water into the pan (for pan frying the chicken) and let it boil. The gravy should be in nice brown colour. Thicken the gravy with a tbsp of starch water. Pour the gravy on the chicken chop and mashed potato. Sprinkle some coarse black pepper.

8. For the spaghetti, heat the butter on a pan. Sauté the onions.

9. Add the shiitake mushrooms and cook.

10. Pour in the pasta sauce and simmer for few minutes. Add the spaghetti and toss. Place the spaghetti on the plate.

Spaghetti With Onions, Mushrooms And Chicken





Today, I made this Spaghetti for dinner. I didn't go to the wet market this morning and I was thinking just make a simple dinner.

I need to send my son to his tuition lessons on every Saturday afternoon. So preparing dinner is always a challenge to me on Saturday. Need something quick and easy! For the pasta sauce, i used store bought. Hehe... Oh yes, I serve the spaghetti with Italian Salad. I bought a bag of Italian Salad at Tanglin Market Place while waiting for my son to finish his class. Hmmm... The salad was very fresh and nice. I love the balsamic vinaigrette dressing! I boiled 2 eggs to add on the salad. A satisfying dinner! Burps!

Serve 5

Ingredients:

250g Spaghetti
1 onion (diced)
2 cloves garlic (sliced)
1/2 green bell pepper (diced)
1/2 yellow bell pepper (diced)
200g chicken fillet
10 button mushrooms (sliced)
400g pasta sauce (store bought)
1/2 tsp sea salt
1/2 coarse black pepper
2 tbsp olive oil
Water for cooking the spaghetti
200ml or more water

Methods:

1. Boil a pot of water. Add a little salt and olive oil. Once the water starts to boil rapidly, put the spaghetti in. Cook for about 15 minutes. Drain the spaghetti once it's ready. Set aside.

2. Sprinkle the sea salt and coarse black pepper on the chicken fillets.

3. Heat 1 tbsp olive oil in a non stick pan. Pan fry the chicken fillets until nicely golden brown. Set aside. Slice them into bite sizes.

4. Using the same non stick pan, heat 1 tbsp olive oil. Sauté the onions and garlic.

5. Toss in the bell peppers and mushrooms. Cook for a minute.

6. Add the pasta sauce. Mix evenly with the vegetables.

7. Add about 200ml of water and cook for 1 minute.

8. Add the spaghetti and chicken. Toss evenly. Turn off the heat.

You may grill the chicken fillets instead of pan frying.
