Quick Easy Macaroni



Ingredients (one serving):

1/3 carrot (diced)
1 dried mushroom (soaked and diced)
1 tomato (diced)
2 stalks of bak choy (chopped)
1 Knorr chicken cube
1/2 Japanese La-yu (chilli oil)
Coarse black pepper
300ml water or more
1 handful macaroni 


Methods:

1.   Heat the water with a small pot. Once boil, add the chicken cube and macaroni.

2.   Then add the diced mushrooms, carrots and tomato to cook for 12 minutes. Turn down the heat.

3.   Turn to high heat and add the chopped vegetables. Cook for few seconds and turn the heat off.

4. Drizzle the chilli oil and coarse black pepper. Done!

Macaroni With Shredded Roasted Duck And Vegetables


Have some leftover roasted duck or chicken in the fridge? How about whipping up a nice hot bowl of macaroni with roasted duck or chicken? I had this for supper on Saturday night. I didn't want to cook instant noodles... And WOW!!! The roasted duck added much flavour into the soup! I definitely will make this again!

Serve 2

Ingredients:

Macaroni for 2 pax (about 2 handful for a pax)
1 knorr chicken cube
800ml or more water
1/3 Carrot (diced)
Flowering Choy Sum
Shredded roasted duck
Coarse black pepper

Methods:

1. Boil the water in a pot.

2. Once the water starts to boil, put in the chicken cube. Stir and let it dissolve.

3. Toss in the macaroni and carrots. Cook for about 10-15 minutes. The water should have reduced by half. Add more water as desired.

4. Add the shredded duck and continue to cook for another few minutes.

5. Add the leafy vegetables and cook for few seconds.. Turn off the heat.

6. Sprinkle with coarse black pepper.

Easy Macaroni Chicken Soup


Sometime during the weekends, I will prepare this kind of 1 dish meal for lunch. It's easy and quick, especially good for lazy people like myself. Hahaha!!!

Ingredients:

100g macaroni
1 Quartered tomato
1 stalk celery (sliced)
1/4 onions (chopped)
8 slices carrots
2 shiitake mushrooms (sliced)
1 handful of shimeji mushrooms
A dash of coarse black pepper
1 stalk Chili padi (optional) (chopped)
1 tbsp olive oil
Chicken soup
Salt (optional)

Methods:

1. Heat the olive oil in a pot.

2. Sauté the onions. Add the celery, tomato & carrots and stir fry.

3. Pour in the chicken soup.

4. Once boil, add the macaroni. Cook for 10 ~ 15 minutes.

5. Add the mushrooms and chili. Cook for few minutes. Add salt as desired.

6. Turn off the heat. Sprinkle the black pepper.

You may add shredded chicken or pork balls.

Poppy's Minestrone Soup



Occasionally I make this hearty soup for lunch. I love anything with tomatoes. This soup is so easy to make. Just chop all the vegetables and toss into the pot, and you will get a pot full of nutrients soup!

Serves 2 or 3

Ingredients:
4~6 cups (1 - 1.5litres) of chicken soup
1 onion (chopped)
4 stalks of celery (chopped)
1/2 carrot (cubed)
1 large potato (peeled and cubed)
1 tomato (quartered)
1 small bowl of kennel corns
1 cup of macaroni
4 tablespoons of tomato purée
1 tablespoon olive oil or butter
Salt (optional)
Coarse black pepper (optional)

Methods:

1. Heat the olive oil in the pot.

2. Fry the onions for a minute till fragrance.

3. Add the carrots, potatoes, celery and tomatoes and fry together with the onions for another minute.

4. Pour in the chicken soup.

5. After the soup starts to boil, turn down the heat. Put in the tomato puree and simmer for 20 minutes.

6. Add in the macaroni and cook for another 10~15 minutes.

7. Add the corn and cook for few minutes.

8. Season with salt and turn off the heat.

9. Sprinkle with black pepper and serve.
